Rummed Fruit

Rummed fruit is the base ingredient in Christmas cake which is a rich pudding-like cake made in the Caribbean. I loved the infused fruit so much that I thought, why not skip the cake and go straight for the gold! They taste great on top of brie cheese, hot apple pie, or mixed with spiced cider, but I like them best as a finger food. What You'll Need: • Glass canning jars and lids • Dried fruit (golden raisins, cranberries, apricots, cherries, anything will taste great, you could even throw … [read more...]

Sally’s Salsa

Every year I love to have a garden and experiment with growing different things. Last year I grew just a “salsa garden” with garlic, peppers, onions and of course tomatoes!  I ended up canning my own homemade salsa to give away as gifts. It felt so nice to be able to say I grew almost everything in my salsa myself (I did add cilantro, lemon pepper and vinegar from the store). I also made my own label for my canned salsa jars. My salsa garden conveniently was located at our My Own Labels office … [read more...]

Homemade Dilly Beans

If you're looking for an alternative way to store your green bean harvest this year, dilly beans are a great option. Not only are they a delicious snack or garnish for your Bloody Mary, but they make for a well-received (and often requested) gift for your friends and family over the holiday season. Dilly beans take a few weeks to develop their flavor, so if you get started now, they'll be ready just in time for Christmas. You may double or halve the recipe depending on your needs, but make sure … [read more...]

Grape Juice

Canning is one of my favorite things.  Not so much the process, that can be a real pain.  But I love the results.  Late every fall, jars and jars of home-canned goodness line up on my pantry shelves.  The feeling of accomplishment is so great that sometimes when I'm having a bad day, I just go down and look at my pantry shelves.  I know, pathetic isn't it?  But it really makes me feel better. One thing I hadn't ever done was juice.  A few years ago, however, I got a call from a friend who … [read more...]

Pink Applesauce

Canning has been a part of my life for a long time.  Even back when it wasn't trendy and stylish like it is now.  My mom never canned when we were growing up except for the occasional jar of pickles so I'm not really sure why I got the desire to start canning but for whatever reason, I did.  Shortly after my marriage I decided that I would try my hand at canning peaches.  A friend had found an orchard where we could u-pick for a fairly inexpensive price so off we went.  I came home with far … [read more...]

Preserved Peaches

It is not just Georgia where fantastic peaches are grown. Here in the Willamette Valley in western Oregon, we get peaches that can’t be beat anywhere in the world. And I have to say that, as with all foods, a large part of peaches’ deliciousness is in how they are served, and the way I like them best is still on the tree. I have been u-picking peaches at Oregon farms since I was a little girl, and my mom and I still go out to Sauvie Island and pick on those wonderfully perfect days in … [read more...]

8-Day Sweet Pickles

Pickle making has been a part of my life since about the time I learned to walk. I remember chasing after little toys under the kitchen table, and seeing Mom, tall and young, wearing a flowered apron and with her hair in bobby pins and a bandanna, pouring a big pot of pickle water out into the sink. It happened every year at about the same time we picked peaches from the tree growing outside the kitchen window. I also remember the kitchen filling up with the sweet-sharp smell of sugar, vinegar and … [read more...]
