Roasted Garlic & Onion Jam

Roasted Garlic and onion jam is a spread that can be used in multiple ways. For instance, I like to smear it over toast for a quick and simple snack, but it can also be paired with a fried egg or served over potatoes. No matter how you use it, this savory jam adds a unique and delicious twist in flavor, and makes a great gift for your friends and family. Membrillo

You may notice that this is the second quince paste recipe on the blog. My friend Barbara made the first one, and my taste buds know how wonderful her quince paste turned out. But I made some too, and packaged it up differently from hers, so you can pick which version you want to make and package it up her way or my way. Or do something completely different - and if you do, please let us know! Barbara and I met over quince paste and membrillo. She calls it quince paste; I call it membrillo, because … [read more...]

Quince Paste

It’s magical here in the middle of Portland, Oregon. I am amazingly fortunate to live in the city while at the same time have a beautiful backyard to escape to. Every year I look forward to the ripening of the two quince trees that grow in my backyard. I, like others who are fortunate to possess this fruit tree, admire its flowers, pray for healthy fruit and feel guilty if we don’t harvest every last aromatic quince. Only a few make it to full ripening without blemish. Those I use for brandied … [read more...]

Homemade Blackberry Pepper Jam

As I was looking for a recipe where I could use my freshly picked blackberries, I came across this unusual jelly recipe that included hot peppers. The original recipe called for jalapenos but I found I can use any hot peppers and spice it up as hot as I want it to be. I then took a sample to work for everyone to try and tell me what they thought, and they all loved it! Some said it could be hotter (I used 6 serranos) and others said it was perfect. I think it could use 1 more pepper for my taste … [read more...]

Jalapeno Jelly

Jalapeno jelly has been one of my favorite things since the day my grandmother gave me my first jar. That's why I couldn't wait to make a batch of my own with the jalapenos from my garden this summer. A funny thing happened, though. After the first batch was made, I found myself making another, and another. I couldn't stop! And now I have more than enough jars to give away as gifts this Christmas. Jalapeno jelly is sweet and spicy, so it makes an excellent gift for your friends and family who … [read more...]

Tomato Jam

It was only recently that I first read about the wonders of tomato jam. I'll admit, I was initially quite skeptical, but curiosity soon got the best of me. So last week, after walking home with a bag full of this season's first ripe tomatoes from the local farmer's market, I decided to give this recipe for tomato jam a try. The process for making tomato jam is super simple because the tomato skins and seeds are added to the jam rather than removed. All that is required is a little chopping, grating, … [read more...]

Lemon Curd

In the spring, I find myself craving desserts that are delicate and full of citrus. That's why lemon curd is one of my favorite things to make this time of year. The smooth, tangy flavor is so delicious and versatile that I like to prepare several batches all at once. In this way, I ensure that I have plenty for myself, and enough to share with my closest friends and family. Lemon curd is really tasty straight from the jar, but there are lots of different ways it can be used. If you want to go … [read more...]

Try spreading the jam over toast, and cracking the yolk of a fried egg over the top for a memorable breakfast experience. Homemade Nutella

We've all heard the saying, "When life gives you lemons, make lemonade." Well, when life gives you hazelnuts, make Nutella! A few weeks ago, I was given a huge paper sack full of shelled hazelnuts, and the cogs in my brain started turning. I started thinking of hazelnut-centric recipes, and almost instantaneously settled on the famous chocolate-hazelnut spread from my childhood. A week later, I was cracking nuts (saving the shells for our garden) and testing recipes. It didn't take long for … [read more...]

Sour Cherry Jelly

Ingredients: • 4 lbs pie cherries • 7 cups sugar • 1 bottle Certo pectin Wash cherries and heat slowly on stove in a small amount of water. Simmer, covered, until soft, then mash with a potato masher (do not crush the pits). Bring to a boil, cover and simmer for 10 minutes. Pour into a jelly bag and strain the juice out. You can squeeze the bag for more juice, but then the jelly will not be sparking clear. Measure the amount of juice you have (should be 3 - 4 cups) into a very large pot, … [read more...]
