Mold can occur in the oils with even the slightest presence of moisture, so make sure all your bottles that are going to hold your oil are thoroughly dried and that even the herbs you are infusing are patted dry as well. Also make sure you are filling your bottles to the top, leaving little room for excess air inside and storing them in a dark cool place, as warmer places may promote condensation. Lacy is at home now with a baby boy, but I asked this question to our staff who love to cook. Here are their responses -including mine. Hope this helps.

Best answer- Julie:  Martha Stewart says, &quot;in air tight container for up to 3 days&quot;   Rice Krispies website says, &quot;Store no more than two days at room temperature in airtight container. To  freeze, place in layers separated by wax paper in airtight container. Freeze for  up to 6 weeks. Let stand at room temperature for 15 minutes before  serving.&quot;

Stacy -  I like to make them the day before if I can, but as long as you can keep them in an air tight container they should be okay for a few days. Saran wrap doesn&#039;t work as well, put them in tupperware, trust me. 

Jeanne - you can make them at least a week ahead. Longer than that, they begin to get chewy.

Julie - if made with the marshmallow recipe, I think they will last till the end of time! But actually, I went to answers.yahoo.com and one person said, in an air tight container, 3 months. Another said a couple of months.</description>
