Quince Paste

It’s magical here in the middle of Portland, Oregon. I am amazingly fortunate to live in the city while at the same time have a beautiful backyard to escape to. Every year I look forward to the ripening of the two quince trees that grow in my backyard. Homemade Blackberry Pepper Jam

As I was looking for a recipe where I could use my freshly picked blackberries, I came across this unusual jelly recipe that included hot peppers. The original recipe called for jalapenos but I found I can use any hot peppers and spice it up as hot as I want it to be. Rummed Fruit

Rummed fruit is the base ingredient in Christmas cake which is a rich pudding-like cake made in the Caribbean. Sally’s Salsa

Every year I love to have a garden and experiment with growing different things. Last year I grew just a “salsa garden” with garlic, peppers, onions and of course tomatoes!  I ended up canning my own homemade salsa to give away as gifts. Sour Cherry Jelly

Ingredients: • 4 lbs pie cherries • 7 cups sugar • 1 bottle Certo pectin Wash cherries and heat slowly on stove in a small amount of water. Simmer, covered, until soft, then mash with a potato masher (do not crush the pits). Bring to a boil, cover and simmer for 10 minutes. Pour into a jelly bag and strain the juice out.
